When I look for a dessert, there are few things that would put me off from making it. One of the reasons is if the recipe asks for complicated ingredients and crazy utensils. You know…the things you usually don’t have or are probably stuck at the back of your cabinets.
But not this one. No…this one is as simple as it gets.
This recipe is the kind of recipe that you’ll make when you have to bring a dish but has no idea on what to make. Or when you are really craving that sweet goodness but can’t bring yourself to stand in the kitchen for an hour making something that will take a little over 2 hours to be enjoy.
The bad thing about this quick recipe is that it might just spoil you a little too much. With such simple steps and easy to find ingredients, you might never want to make another dessert ever again.
Okay, maybe that’s an exaggeration…but you try it first.
The idea for this delicious ‘cake batter’ chocolate truffle actually came from a friend (thanks Ju!). In all honesty, she actually made these and was so excited by the idea of a raw, vegan treat that she gave it to me. I’m glad people think of me when they eat vegan, healthy desserts. ‘Cake Batter’ Chocolate Truffles
I simply tweaked the measurements and used the cocoa powder to coat these babies and give it a balance to the sweetness of the truffles.
These will keep in the fridge for a couple of weeks (if you can manage that) and are perfect to make with the kids. Plus with only 4 natural ingredients, you definitely won’t have to worry about the little ones sneaking on them.
Let’s get down to it and prepare your kitchen for the easiest dessert EVER!
- 10 dates (or multiple of)
- 2 tsp coconut oil (melted)
- 2 tbsp cocoa powder
- Vanilla essence
- In a food processor add all ingredients and blitz until a dough is formed.
- Transfer to a bowl and make little balls.
- Dust with cocoa powder.
- Serve and enjoy!
