Hey there!
It seems like Wednesdays are my favourite days to create new stuff in the kitchen…Every now and then I get stuck without ideas and kinda desperate to find something exciting to share with you all.
But every Wednesday, it seems like the imagination fairy (is that a thing?) knocks on my door and give me some crazy ideas… Like this one.
The story behind this shiny beauty is that it was an accident! An accident! Early in the morning I decided it was a good idea to make a super indulging smoothie for breakfast. So after rummaging my fridge for a couple of minutes, I found one extra avocado (yay) and decided to use it up before it got past its best.
Another few extra ingredients in, and maybe the fact that I was still half asleep, made me think that there was enough coconut milk for the smoothie in my mixer. Rookie mistake, or maybe not. As soon as I lift the lid off, the creamy texture surprised me and I wondered what the heck I’ve done. Until I tasted it…
GOD BLESS MY MORNING SLEEPINESS! I just made pudding for breakfast! And what a delicious surprise. This super indulging pudding can definitely be on the menu for your first meal of the day.
Only 5, yes, f-i-v-e ingredients, a blender or mixer and you’re set!
I then made this Chocolate Avocado Pudding for my flatmates and they believed it to be a not-very-sweet type of dessert (and by that, I mean they needed a lot more sugar to make it a dessert), so I guess it comes down to how much sweetness you want to add to your pudding. As I used stevia in this recipe, I’m guessing the texture won’t be affected at all.
I believe that the fact I don’t eat processed sugar anymore ‘helped’ me achieve this level of sweetness. So, if you are still used to eat a lot of sugar, just add more stevia or sub for your preference of sweetener/sugar.
What I really loved about this recipe was the fact that it can be made really quickly and you don’t really need too much time nor ingredients. It’s also gluten & soy free and low in sugar (if you make it with Stevia).

- 1 avocado
- 4 tsp of raw cocoa
- 2 tsp of organic peanut butter (nothing added)
- 300 ml organic coconut milk (Coco Quench) or other no-dairy milk
- Stevia (to your taste)
- Fruits, nuts, shredded coconut, seeds or cocoa nibs.
- In a high speed processor, add all the ingredients and blitz.
- Check for sweetness and if needed, add more stevia or your preferred sweetener.
- Serve and add your favourite toppings.
