Hello beautiful souls!

I have been so inspired by so many amazing recipes from Ascension Kitchen App (Lauren is amazing and her app is just eye-catching and full of delicious recipes) so I decided to make a raw dessert for an afternoon tea with my friends.

And with a bit of tweaking here and there I made this really yummy dessert. Ok, I also must admit that I’ve been dying to use a coconut condensed milk that I bought a while ago and I was just waiting to find the perfect recipe. Which I’m pretty sure I did. Anyone else used it before?? Let me know in the comments 😉

This recipe is perfect for Christmas here in Australia (or in any other tropical country really) but also, for any time you feel like something fancy but easy to make. I made this specially to say an ‘official’ goodbye to Summer. We already miss you…

Alright, I must add that this recipe really taste delicious with berries, but if they are not in season, just pick up whatever fruits are and use them instead. Make good use of the fruits and veggies that are in season is a lot better for your body, your pocket and the environment. So use them well and use them a lot! I think it would taste delicious with some peaches and apricots too.

Frozen dessert that's perfect for that Christmas party.

Ingredients
  • For the base:
  • 2 cups of walnuts
  • 1 cup of dates (soaked in hot water for 1o minutes – 1 hour)
  • 1 tsp vanilla essence
  • Pinch of Himalayan salt
  • For the slice:
  • 1 can of coconut condensed milk (you can buy it at Woolworths)
  • ½ can of coconut milk (just the creamy part on top)
  • 1 tbsp of rice malt syrup
  • 2 tbsp of coconut oil (melted)
  • 1 tsp of organic vanilla essence
  • Juice of ½ lemon
  • Handful of chopped berries
Instructions
  1. For the base:
  2. Add the walnuts in a high-speed food processor and blend until coarse. Then, add the soaked dates until it turns into a sticky crumb. You may have to scrape the sides while mixing it. Add the salt and vanilla essence. In a small rectangular deep dish place some cling wrap up until the sides, put the mix in and press evenly until flat. Keep it in the freezer while you make the slice.
  3. For the slice:
  4. In a blender or food processor, add all the ingredients but the berries and blend well. Then remove the deep dish from the freezer and add the mixture on top of the base. Place in the freezer for about an hour. Then, remove from the freezer add the chopped berries evenly on top and spread around the dish. This way, the berries won’t be all at the bottom, but rather scattered on top of the slice.
  5. Place it back in the freezer for about 3-6 hours depending on how cold your freezer is and how hard do you want your slices. You can remove them from the freezer and keep it the fridge before serving if you’d like a softer serve or you can serve it straight from the freezer for a colder, frozen-like dessert.
