Hello everyone,
I know it’s been a while and I’m not even gonna lie. I haven’t cooked much these days, haven’t taken many food pictures these days and haven’t even worked these days. That’s right, I’m on holidays and for the first time in the year and quite chilled and I haven’t done much at all these days, apart from relaxing and enjoying the views of Vanuatu.
Oh yeah, also forgot to mention that I’m away at the moment. I flew from Brisbane on the 20th of December and I’m staying here until the 3rd of January (2016!!). I’m sooo happy to be able to take this time off, although I can’t complain about 2015 being a boring year (hey Brazil and Japan) but this is the first time I’m having some time to actually RELAX and enjoy the day without worrying about working, making appointments or getting from one place to the other. It actually feels like holidays (for the first time in a couple of years).
I’m here in Port Vila in my partner’s friend’s house where we have been able to stay in a comfy bed and a beautiful view from our bedroom…
I managed to finally get my Open Water Diving Certificate (yay) and I visited way to many beautiful places while in this tiny little island. The people from Vanuatu (aka Ni-van or Ni-Vanuatu) are the most beautiful and friendly people I’ve ever seen in my life. They smile and greet you when you walk past and they have a pretty unique outlook in life…even having some serious problems (like cyclone Pam which destroyed half the country) won’t wipe off their happiness and positive attitude towards life. No wonder they’ve been awarded the ‘Happiest People in the World’ twice already 🙂
I’ve been to a couple of islands and places that I can’t even believe they existed. Pure pristine waters, white sands, rich corals and smiles everywhere. It’s been truly a gift to be able to spend Christmas over here with my partner and enjoy the beauty of ‘fare niente‘.
Anyways, I’m glad 2015 is almost over. It’s been a blessing but also it’s been a tough year, with lots of adventures and learning. A year that thought me greatly and has been incredibly positive in many, many ways. But I’m definitely ready for 2016. Many more adventures to come in this new year that I’ll be extremely happy to share with you all!
But before I go, I have to share a simple smoothie recipe I made here with fresh and local produce.
Vanuatu is a tropical island (actually 82 islands in total) in the middle of the pacific. It produces mainly fruits and root vegetables. All organic and grown here!
So here’s my go-to smoothie while I’m here:
- 2 Mangoes
- 2 Bananas
- 2 Passionfruit
- ⅓ Papaya
- Small handful of (wild) Raspberries
- 2 small Carrots
- 250ml Water
- Ice
- Blend all ingredients in a blender (food processor/Vitamix) until smooth.
- Serve and enjoy!
