Simple, healthy and packed with flavour, this Vegan Alfredo Pasta is perfect for the health conscious who don't want to miss on flavour.

  • Half head of cauliflower
  • 100 grams of roasted & salted cashews
  • 2 garlic cloves
  • 3 stalks of shallots
  • Nutritional yeast
  • Paprika
  • Mixed Herbs
  • Truffle oil (optional or sub for olive oil)
  • Salt & Pepper
  1. First off, wash the cauliflower and cut into large florets.
  2. Cook in water and a bit of salt until soften.
  3. Meanwhile, soak cashews in hot water.
  4. Chop the garlic and shallots and reserve.
  5. Remove cauliflower from water but save the water for cooking the pasta later. Reserve.
  6. Rinse cashews and put them in a food processor.
  7. Blitz until it starts to become a paste.
  8. Then, add the cauliflower one by one process.
  9. Add all the seasonings and truffle oil but the garlic and shallot.
  10. Continue to blitz the sauce and add water until you reach a creamy consistency.
  11. Now, cook the pasta according to package instructions.
  12. In a large frying pan, add olive oil and sauté garlic and shallot until soft.
  13. Transfer the sauce into the pan and mix it thoroughly.
  14. Drain pasta and top with sauce.
  15. Serve with olives and vegan parmesan or nutritional yeast.
