Fresh, healthy and simple Mexican feast featuring fresh Salsa Tacos and a Basic Guacamole.

  • 1½ ripe avocados
  • ½ chopped tomato
  • Coriander, finely chopped
  • Olive oil to taste
  • Salt and pepper
  • 1½ chopped tomatoes
  • ½ chopped yellow capsicum
  • ½ chopped brown onion
  • Coriander finely chopped
  • 1 small red chilli (chopped and deseeded)
  • Vegetable oil (coconut can be used too)
  • Salt & Pepper
Sautéed Mushrooms:
  • 5 medium mushrooms
  • Olive oil
  • Salt to taste
To serve:
  • Taco shells (look for products with minimum number of ingredients)
  • Blue corn chips
  • 1 can of red kidney bean
  • 1 can of low salt corn kernels
  1. In a bowl, place the avocado and mash it with a fork.
  2. Then, place the chopped tomato, coriander, salt, pepper and olive oil and mix well.
  3. Taste it and adjust for seasoning.
  4. Serve with blue corn chips.
  1. To make the fresh salsa, in a pan add the oil, then sauté the onion.
  2. Add the capsicum and the tomato. Sauté them until the tomato is soft.
  3. Add the chilli and coriander and mix well.
  4. Season and taste.
  5. TIP: Add a bit of sugar if the tomatoes are too acidic.
  1. In a frying pan, add the oil and over medium heat add the mushrooms.
  2. Sauté the mushrooms until cooked and season with salt.
  3. Set aside to serve with tacos.
To serve:
  1. Remove corn and beans from cans and serve them in bowls.
  2. Remove the salsa and mushrooms from the heat and serve in a bowl too.
  3. Place taco shells in a plate and serve.
  4. Assemble your tacos and enjoy!
