Banana Ice Cream

Hi there,

First of all, welcome to Eat Yourself Green!

It’s been a while since I started considering the possibility of writing a blog…. I’ve always wanted to share some thoughts (and recipes) but I’ve never been really that creative with words to actually take the step to write something consistent. Also, the fact that I’m writing in a different language than my own makes it a lot more scarier than I first thought. So, here I am, sitting, writing, proofreading, changing and deleting my first words, just to start all over again.

But this time, it’s for real. I’m starting to write this blog and I’ll make my best to share good recipes, tips and helpful information as much as I can.

At my Eat Yourself Green on Instagram I started sharing some of my recipes after I became vegetarian and had to find out what other options were out there other than veggie burgers and tofu. All the recipes you’ll find here will be vegetarian or vegan but they always will be healthy (ok, 90% of the time).

One of the first wonders I’ve found out about this new lifestyle is that I can eat plenty. And I do, because I love food. I grew up having plenty of food around and thankfully I always had access to good, nourishing foods (thanks mom!). When I moved to Australia, I had to find my way back to health as I put on 8kg after going through some rough times and having a really short budget as any overseas student. My diet consisted of too much processed foods and very little room for veggies. As I evolved into this journey into vegetarianism I realised that I’m pretty lucky I did it here in Australia, as in Brazil it would be much more difficult, although not impossible, to have the options I have here. I have plenty of access to information and quality ingredients at a reasonable price, plus lots of options when eating out!

The other thing I love about my new lifestyle, is that I can brag to my friends that I can eat ice cream for breakfast, lunch and dinner without ruining my health (insert smirk face here). So, nothing fairer than to share this delicious little treat as my first recipe in the blog.

Banana Ice Cream

Banana Ice Cream, or Nice cream or Nana Ice Cream as the Instagram community kindly named it, is a simple yet satisfying way of curbing your sweet tooth, without loading up on processed sugars, bad fats and nasty chemicals.

The beauty of it: its simplicity. All you’ll need is frozen bananas. Then you can let your imagination run free and wild.

The one and only Nana Ice Cream/Nice Cream/ Banana Ice Cream.

Ingredients
  • 2 bananas (frozen for at least 12 hours)
  • Dash of water/alternative milk/coconut water (as you prefer or have available)
Instructions
  1. In a high speed food processor (or Vitamix) blend the bananas and milk/water until well combined. It will look like a soft serve.

 

And that’s it. Easy peasy. However, you can make it way more interesting. This is just the basic idea for you to work with. Now, you can add your flavours, toppings and play around. Try different things, make it fun and delicious. The way food should be.

Here are some great combos. Just add to the basic recipe and you’ll have a variation to create the flavours you like.

Peanut Butter and Chocolate Ice Cream

Add a tbsp of organic peanut butter + 1 tbs of organic cacao. I like making mine with rice or almond milk. Top with cocoa nibs, peanuts or peanut butter.

Very Berry Ice Cream

Add one handful of organic mixed berries. Top it off with buckini, pepitas and goji berries.
